This Guinness Cake recipe is a must share! It’s the most delicious chocolate cake ever, and I guarantee you’ll be making this throughout the year. It’s moist, flavorful and so insanely rich with the cream cheese frosting on top. Scratch the boxed cake and whip up one of these for a decadent and delightful dessert!
WHAT YOU WILL NEED FOR THE CAKE
- 1 cup Guinness
- 1 stick of butter, cubed
- 2¼ cups sugar
- ¾ cup baking cocoa
- 2 eggs, beaten
- 2/3 cup sour cream
- 4 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1½ teaspoons baking soda
- 1 teaspoon instant coffee grounds
Preheat oven to 350 degrees. In a small bowl heat beer and butter until the butter is melted. Remove from the heat and whisk in the sugar and cocoa. In a separate bowl, whisk the eggs, sour cream and vanilla until well blended. Stir into the beer mixture. Combine the baking soda and flour together, then whisk into the beer mixture until the batter is smooth.
Pour mixture into one large spring form pan or 6 small individual ones. I chose to do mini cakes for everyone, and I lined the bottom of the pans with parchment paper for a cleaner finish. Bake for 40 minutes or until a toothpick comes out clean.
WHAT YOU WILL NEED FOR THE FROSTING
- 8 ounces cream cheese, softened
- 2 cups confectioner’s sugar
- ½ cup heaving whipping cream
To make the frosting, beat the cream cheese until it is smooth and fluffy. Add the sugar and cream in batches, and beat until smooth. Frost the cakes once the are completely cooled.
