This tomato bread gratin recipe is my go to, especially when I have some several-days-old crusty French bread and tomatoes on hand. You can serve this up as a main dish in a larger meal or as a quick meal paired with some scrambled eggs. It’s hearty, filling, and delicious!


WHAT YOU WILL NEED

  • 3-4 ripened tomatoes, diced
  • 1 several-days-old French bread, cubed
  • 6 cloves chopped garlic
  • 2 tablespoons Italian seasoning
  • 3 tablespoons grated Parmesan cheese
  • ½ cup olive oil
  • 10 fresh basil leaves, chopped

Heat the olive oil and garlic in a skillet, adding the bread and Italian seasoning while you sauté the garlic, coating everything in the olive oil. Add the chopped tomatoes and allow them to break down as they heat up.

Remove the gratin from the skillet and spoon into a bowl. Toss in the Parmesan cheese and basil, and serve with scrambled eggs or on its own. Enjoy!
